Your Restaurant Year: A Seasonal Playbook for Full Tables and Voucher Sales
Seven moments in the year that fill your restaurant, and how to prepare each with a dated Experience, vouchers and the right booking rules.

The busiest days of the year are no accident. The restaurants that win them start six to eight weeks earlier.
Valentine's Day, Mother's Day, Advent, New Year's Eve: guests decide early, and they book where it is easy. If your offer is online, clearly priced and bookable weeks ahead, you fill the evening before the competition has published a menu.
The Three Levers
Almost every seasonal success comes from the same three tools:
- A dated Experience. One menu, one evening, a fixed number of seats. Guests understand what they get, and you plan the kitchen with confidence.
- Vouchers. For Mother's Day and Advent, gifts decide. A voucher that can be bought and sent online in two minutes sells while you are busy cooking.
- Rules that protect you. For high-demand evenings, ask for prepayment or a card guarantee, so a no-show does not leave an empty table on your best night.
Your Calendar, Moment by Moment
Valentine's Day (February). A menu for two as a single Experience, limited to the seats you want to give away. Open booking four to six weeks ahead and close it when the capacity is full.
Easter (March/April). A brunch or lunch Experience with a fixed time. Families book groups, so allow larger party sizes and ask about children's seats when booking.
Mother's Day (May). Vouchers first, tables second. Promote the voucher two weeks before, and offer a dated Experience for the day itself.
Summer terrace (June to September). Evening Experiences with a theme, such as grill nights or wine evenings, to fill the days that are quiet in good weather.
Autumn (October/November). Game, mushrooms, harvest. A seasonal tasting menu available only in a set period shows guests why they should come now.
Advent and Christmas (December). The biggest voucher season of the year, and the time for company dinners and group bookings. Prepare both early.
New Year's Eve. A gala menu with prepayment and a waitlist. When a table is cancelled, interested guests are notified at once and the first to respond gets it.

A Simple Rhythm
- Eight weeks before: Create the Experience, set price, seats and rules.
- Six weeks before: Publish and tell your regulars first, for example with an invitation to a preview evening.
- Four weeks before: Share the link on your website, social media and in your newsletter.
- Two weeks before: Check the numbers. Open more seats, or let the waitlist do its work.
- After the date: Thank your guests and note who came, so the next season starts with a warm list.
Plan your next season now: one Experience, one voucher, clear rules, and your busiest evening is already half full.
